Leek and Mushroom Risotto

Leek and Mushroom Risotto, Serves 4, 33pp per recipe, 8pp per serving. 

Ingredients: 

250g Arborio risotto rice
25og Sliced chesnut mushrooms
1 Leek sliced
150ml weightwatchers fruity wine
1 knorr vegetable stock pot
750ml water
 
60g extra light soft cheese
25g parmesan cheese
 
1 garlic clove chopped
1tsp olive oil warmed up and 3 butter bud sachets melted in it
Black pepper to taste
 
Method:
 
Add the olive oil and butter bud mixture to the pan on medium and then gently fry off the garlic and leeks till they soften up maybe 2-3 mins, then add the mushrooms and some black pepper, 3 tbsp water and cover for 5 mins. Mix the knorr vegetable stock pot with the 750ml water but don’t add yet, add the wine to the mushrooms then the risotto rice and stir constantly for 1 minute, then add the stock in, give it a good mix up and leave to simmer for 20-30 mins stirring every now and then until the rice is cooked to your taste I like mine a little al dente..  Once it has thickened up add the soft cheese and parmesan and mix it up so it’s looking creamy and serve topped with a handful of fresh parsley.
 
Maybe add a garlic ciabatta for extra pp.. I will recommend the Nume range mini garlic ciabatta’s for 7pp each they are yummy and don’t taste like low fat ones at all!

Fabulous weekend, but…

I am glad to be back on track now.. However I had a lovely weekend of eating and drinking with my friends.. after a weigh in that showed me I had lost 1.4lbs this past week giving me another 7 on my online tracker and making me realise I am 3lbs away from my 10% so that is my goal for the next two weeks! On Saturday I went to my nephews 4th birthday party, I ate cake, chocolate orange brownies that were amazing!! I’m totally serious these were by far the best thing I have ever tasted.. So much so I had 3!!! Oh my god, I will be endeavouring to grab the recipe from my sister in law and trying to scale them down to make them pp friendly as she told me how many calories were in one and the ingredients.. Trust me you don’t want to know if your following ww lol. I also had a couple of sausage rolls and pink wafers, along with half a cheese bap and some tomato and cucumber! I quite happily ate all of this knowing that I had my weeklies and over half my dailies left to cover it.. In the evening we had some friends round for dinner, I was going to make Leek and mushroom risotto in the slow cooker but my sister in law lent me a big electric frying pan thing which is like a huge wok really so I did the risotto in that instead it was gorgeous and looked so nice in the pan but I forgot to take a photo 😦 I will post the recipe for this later on tonight as I just want to tell you my daily menu for yesterday and today in this post. So after the amount of wine and crap I consumed on Saturday I wanted to get back on track quite quickly yesterday but I was hungover which means I really wanted comfort food, food that has substance and doesn’t feel like it is too healthy if you catch my drift.. So this is what I made

Yummy beans and mushrooms on toast with fresh parsley and 20g reduced fat cheese! 10pp

Fantastic hangover food yet not wasting any of my daily pro points! So my menu for yesterday was:

Brunch: 2 slices of kingsmill 50/50 5pp, 1 butter bud sachet 0pp mixed with 2 tbsp water and a pinch of garlic granules, 100g mushrooms sliced 0pp, 200g nume baked beans 4pp, 20g co-op reduced fat cheddar 1pp. 

Dinner: Nume cajun spiced chicken fettucine 11pp.

Snacks: 10g cheerios 1pp, drizzled with 15g dark chocolate drops 2pp and a bottle of Lucozade revive 1pp This is my go to drink when hungover.. so glad they do a sugar free version now!! 

My daily menu today was: 

Breakfast: 30g cheerios 3pp, 120ml skimmed milk 1pp.

Lunch: weight watchers tortilla wrap 3pp, 50g wafer thin turkey 1pp, 1 shallot sliced 0pp, 15g low low cheese 1pp and 15g light salad cream 1pp.

Dinner: 50g wafer thin turkey 1pp, 170g mash potato 4pp, nume baked beans 200g 4pp and 15g low low cheese 1pp. 

Snacks: none yet but I have 6pp left and will maybe have something out of my graze box or one of those tasty little treat bars I posted about last week. 

So that’s that I am glad I have managed to get back on track so quickly and easily as we all know, best of all me how easy it is to go off track after a day like I had Saturday.. Yesterday after all that the scales were showing +3, today +2, so hopefully come Friday it will be less.. or at least a sts, I have to weigh in early this week as we are off to London for the weekend on Friday so I won’t be here to weigh in as normal on Saturday! Oh dear I may look like miss piggy after tonight!

So  this week I stayed the same as I predicted, Well this next week I will have a loss! I am using all my weeklies today, get them gone out the way won’t be tempted later in the week then. We are off out for Indian tonight and I am so looking forward to it as we haven’t been out to dinner in quite a while! I went to the food festival down the road today and there were soooo many lovely foods and smells all around me, it was very tempting.. However I had a pint of pink battle Sussex cider and some lunch then came home to crack on with this strawberry cheesecake  I said I was going to make.. Well it’s all gone wrong, the base is more gloopy, rather than crunchy think I put too much water in, and the filling well,  DO NOT buy strawberry flavouring!! It tastes nothing like strawberries at all, I was hoping to save some time but now I wish I had gone with my instinct and made it with fresh strawberry sauce instead, Luckily I had some frozen strawberries so I have quickly defrosted them in the microwave and blended them into a sauce to mix in to it, seems okay, tastes a bit better although I’m not totally sure it’s going to set properly now as the topping was runnier than I intended it to be.. Who know’s I will let you know tomorrow after I have let it set over night, I will give you the recipe another time once I have done it properly! 

So my menu today was: 

Breakfast: 1 weight watchers tortilla 3pp, spread with 15g whole earth natural peanut butter 2pp, 1 Sliced banana 0pp and 5g Dark chocolate drops 1pp.

Lunch: Chicken and noodles with a chicken satay and peanut sauce (I have estimated 17pp probably less but hey that’s the weeklies I had left after dinner tonight so may as well get em gone)

Dinner: Going out for Indian so I’m having Chicken Tikka  dry 8 pieces 14pp, Sag panner is spinach and paneer cheese I have estimated at 14pp for this I think this is being generous too as it is mostly spinach but it will have some oil in it and panner isn’t the lowest of pointed cheese lol. Plus 2 poppadums 8pp.

Snacks: None today, Although I have had a couple of pints of cider 16pp 😉 

Total used 75/26.. All 49 weeklies used!  :O

Today was all about the Green tea! :D

Hiyyyyaaaaaa! So I want to start by telling you what happened to me last night.. Here is what I was feeling when I wrote it on Facebook last night:  I Was feeling really hungry tonight.. I thought about it and thought about it and came up with the reasoning that I don’t think I really was hungry.. I think subconsciously because I knew I had 25 weeklies left my mind was saying its ok you can eat because there are points there to do it, I went and got my self a bottle if water and a pack of nume multi grain snacks 3pp.. Then after I ate those I went for a walk to the car and back with Chris and I’m not hungry any more! I really feel I’ve made some progress in the mind games losing weight can have on you tonight, as earlier I would’ve seen myself having a full on binge.. I’m so glad I stopped and thought about why I was hungry, didn’t deny myself something, but didn’t give in to the mind games either! I feel very proud of myself right now and wanted to share.. Sorry for the long post! 

I posted this not because I wanted other people to congratulate me, But because I want other people to know that you don’t have to succumb to that binge you can feel coming on if you actually stop and think about why your hungry, if you are indeed hungry at all. I really feel this was a massive breakthrough for me in the psychological issues that surround my weight loss battle, and if I can help just one person to overcome something and have the same breakthrough I have done a very good thing. 🙂 

Now on to the green tea’s 😀 I love green tea I have at least 2 cups a day, the numerous health benefits are amazing.. Seriously google it! I usually drink plain green tea with a tsp lemon juice and a couple of sweeteners or a tsp of honey in place of the sweeteners, I love the taste and it’s good for me, what could be better I hear you ask?? Well today I found these… 

Now I know you probably can’t see the flavours that well, (I got this pic of the net as the one’s I tried taking were crap) There are 25 bags in the box, 5 of each flavour they are: Green tea with Cranberry, Green tea with Orange and lotus flower, Green tea with Apple and pear, Green tea with Pineapple and grapefruit and Green tea with Citrus. Today I tried the one with Cranberry, the one with Pineapple and grapefruit and the one with Apple and pear.. I would love to tell you I have a clear favourite but I can’t I love them all, But I can tell you this I will not be going back to plain old green tea again, These flavours are amazing and very refreshing. I bought them in co-op, the box was £1.99, so a fair price I think considering I just checked the twining’s website and they are £2.50 a box on there! :O 

My menu today was lovely:

Breakfast: 35g Hot oat cereal 3pp, 150ml Skimmed milk 1pp, 1 Sliced banana 0pp, 10g Dark chocolate drops 1pp.

Very indulgent breakfast for very small points!

 

Lunch: Weight watcher tortilla wrap 3pp, 40g Wafer thin turkey 1pp, 90g Nume chicken tikka sandwich filler 3pp, (Last of the pot) banana 0pp, a tomato sliced 0pp with a dairylea cheese triangle 1pp.

Dinner: Healthier choice Sweet Chilli Chicken Noodles meal 8pp (This is a bargain on points, very healthy, Filling and yummy to boot!)

Snacks: I’m not actually hungry right now, but I have a snack planned of 2 ryvita’s 1pp, a Dairy lea light triangle 0pp ( You can have 2 of these for up to 1pp) A sliced tomato 0pp.

Total used: 22/26 😀 

Today I have also been out to my sister’s to meet her neighbour Corinne, Unfortunately hasn’t been too well and needs someone to help walk her puppy a couple of days a week so I have volunteered Go me! Bodacia is her name and she is a 5 month old cross between a husky and labrador, she is adorable.. Tomorrow I am taking her for her first walk up over devils dyke, A good workout for her and me! I will pop a pick on tomorrow of her, You will fall in love trust me, I did! Much love Gems 😀 

 

 

Yummiest dinner ever.. Plus the recipes!!

Yesterday I decided I didn’t want another ready meal I wanted something home made, but without a cooker connected this made it difficult until I saw my beloved slow cooker sitting on the side looking all empty and blue. I took some Pork and Venison sausages out of the freezer that I have had in there for a few weeks and let them defrost over night.. These sausages were lovely and I got them in Co-op, they are 12pp for the whole pack and you get 6 in it. I also have bought some butter buds recently as alot of people have been raving about them and I wanted to see if they were any good.. I can honestly say I don’t think I will buy normal margarine/butter again they are amazing, you can use them on Jackets, in mash, on toast, to make sauces, in baking.. The list is endless and they are 0pp for up to 2 sachets and 1pp for 3 up to 7 sachets!! Go buy them seriously Lakeland..Go now!! 

My menu today was a little more snacky, but as I said before I use most/all of my weeklies on the weekend never usually after Monday eve as I know I either put on or Stay the same if I do!

Breakfast: Banana 0pp.. we didn’t have much milk and both Tish and Chris wanted cereal also so I just had that.

Lunch: Weight watchers Tortilla wrap 3pp, wafer thin turkey 40g 1pp, Nume chicken tikka sandwich filler 70g 2pp, 30g sliced mushrooms 0pp, Nume sweet chilli multi grain crisps 3pp (I don’t think they are as nice as the cream cheese and black pepper ones, But each to their own)

Dinner: Pork and Venison sausage casserole 6pp.. (Recipe below), 105g New potatoes 2pp, Lemon, pepper and parsley sauce 0pp.. (Recipe below), Creamy mushrooms 1pp. 

Snacks: Bottle of Stella pear cider 8pp, 3 Things from my graze box.. Ancient forest nuts 6pp, Bounty hunter 4pp, Fruit and seed flapjack 6pp. 

Total used: 42/26, 16 weeklies used.. 25 left! 

Recipe for Pork & Venison sausage casserole: 19pp per recipe, 6pp per serving, serves 3.

Ingredients:
340g pack of Pork & Venison sausages( Mine were from co-op and called Holme farmed) 
1 Red onion chopped 
half a punnet of mushrooms( I didn’t weigh I just sliced sorry lol)
200g Nume Baked beans
1 clove of garlic diced 
400g tin of chopped tomatoes
3tbsp Balsamic vinegar
100ml water
Salt & Pepper to season
 
Method:
I literally put my slow cooker on warm to heat up at 9:30am, whilst I chopped everything that needed chopping, Then put it all in the slow cooker gave it a stir and put the heat to low and left it till around 4pm, then served with new potatoes with lemon, pepper and parsley sauce and carrots(Well carrots for Tish and Chris any way)
 

Mmm Cooking along nicely!

Recipe for Lemon, black pepper and Parsley sauce, 2pp per recipe, 0pp per serving, serves 4. 

Ingredients:
16g Butter buds (8 Sachets) they are 2g each.
2tsp Lemon juice(The recipe called for 1tsp but I didn’t find it very lemony so I used 2.)
1/4tsp Black pepper(I used 1/2 tsp as I love pepper but others may not so much)
Small handful fresh parsley chopped.
120ml Boiling water.
 
Method:
Whisk the butter buds, water, lemon juice, and black pepper together in a bowl, once well combined add the parsley and either serve straight away or set aside for later.

Now with the Lemon, Black pepper and parsley sauce I just poured it over the potatoes on the plate but in hindsight I wish I had put the cooked potatoes into the bowl with the sauce and given them a good shake to coat them as I feel this would have gone down better than having to dip the potatoes in the sauce on the plate lol. Right that’s me for today although I can say that the dinner was a massive hit with both myself and the o/h, Let me know what you think when ya make it. Much love Gems 😀 
 

Another good loss this week.. And baked potatoes!

So I lost another 2.2lbs this week and that combined with my 2.8lb loss last week makes 5lbs in two weeks!! Clearly not having my cooker connected is helping with my weight loss, Hmm untapped market in the weight loss industry?? I think so! I have some reviews for you on some more of the Morisson Nume range which has replaced their eat smart range, The first one is Chicken tikka sandwich filler 2pp for up to 70g, Very yummy and filling probably the best one of the two I tried. The second one is Chicken fajita sandwich filler and again 2pp for up to 70g.. This one was ok but I’m more of a Tikka girl anyway but wanted to give it a try. You could use these in a variety of ways, obviously in a sandwich 😉 I used mine in wraps as I really don’t eat bread that much these days, You could use them as a filling for a jacket potato, mix them with some rice or cous cous.. the possibilities are endless I tell ye! I also tried some Nume cream cheese and black pepper multi grain crisps 25g pack 3pp.. I am in love with them, that is alll I have to say on it TRY THEM!! 😀 Today I decided to get a bit funky with my cereal as I have the same thing every day so I thought I’d spice it up a bit and make it pretty, I added a couple of drops of red food colouring and some vanilla essence but it did the trick…

All spunked up cereal!

I tend to use 120ml in my cereal and 30ml in my coffee.. This is the only milk I have all day, the rest of the time my coffee is black and I drink green tea and water lots of it! Dinner: Jacket potato 185g 4pp, 200g Nume baked beans 4pp, 17g Extra light philadelphia 0pp, 60g Sliced mushrooms 0pp, 30g Co-op reduced fat grated cheddar 2pp, 1 Butter bud sachet 0pp.

Snacks: none, I haven’t been that hungry in all honesty I probably could have had one of those wraps for lunch instead of two as they were quite filling, well we live and we learn.

New weekly pro points in the bank as of today so will no doubt have a couple of drinks or more later on with Chris, I tend to use my weeklies all over the weekend or at least by Monday at the latest as I find if I spread them out through the week I either sts or gain.
