Leek and Mushroom Risotto, Serves 4, 33pp per recipe, 8pp per serving.
250g Arborio risotto rice25og Sliced chesnut mushrooms1 Leek sliced 150ml weightwatchers fruity wine 1 knorr vegetable stock pot750ml water60g extra light soft cheese 25g parmesan cheese1 garlic clove chopped 1tsp olive oil warmed up and 3 butter bud sachets melted in itBlack pepper to tasteMethod:Add the olive oil and butter bud mixture to the pan on medium and then gently fry off the garlic and leeks till they soften up maybe 2-3 mins, then add the mushrooms and some black pepper, 3 tbsp water and cover for 5 mins. Mix the knorr vegetable stock pot with the 750ml water but don’t add yet, add the wine to the mushrooms then the risotto rice and stir constantly for 1 minute, then add the stock in, give it a good mix up and leave to simmer for 20-30 mins stirring every now and then until the rice is cooked to your taste I like mine a little al dente.. Once it has thickened up add the soft cheese and parmesan and mix it up so it’s looking creamy and serve topped with a handful of fresh parsley.Maybe add a garlic ciabatta for extra pp.. I will recommend the Nume range mini garlic ciabatta’s for 7pp each they are yummy and don’t taste like low fat ones at all!
Today I have done nothing except pop to the shop and back and it has been lovely just chilling indoors watching some tv and browsing the web for recipes, I always find myself doing this when I have time on my hands.. I have about 200 bookmarked blogs and recipe websites on my laptop! In fact whilst browsing this is where I found my dinner for tonight, as I still do not have my cooker connected I thought I would search for some microwave recipes which were suitable for weightwatchers and found one that is perfect for me as it uses tortilla wraps… which as everyone who reads my blog will have worked out by now that I am slightly addicted to 😉 Recipe is here at http://www.weightwatchers.com/util/art/index_art.aspx?tabnum=1&art_id=78521&sc=3022
It’s called a Quesadilla.. Ooohhh exotic I hear you say! I changed the recipe slightly to my tastes and to make it a bit more filling here’s the recipe I made:
Ingredients:2 weightwatchers tortilla wraps 5pp25g low low red pepper and chilli cheese spread 1pp1 mini pepper sliced 0pp1 medium mushroom sliced 0pp45g hot tomato salsa 0pp50g Bernard matthews tikka turkey 1pp25g Co-op reduced fat grated cheddar 2ppMethod:Spread 1 wrap with the low low cheese spread, then the other with the salsa. Add the sliced vegetables and turkey too the one with the salsa on and then add the grated cheese last, season to taste then place the other tortilla on top of it and microwave for 1 minute on high. Voila a lovely filling Quesadilla in minimal amount of time and only 9pp! I have done nothing different this week apart from use my weeklies later in the week and do more exercise , which you would think was a good thing Anyhow the scales have not been looking kind the last few days but this is something of a routine for me I seem to have a couple of good losses, then either a sts/gain so I am not too worried I know I have eaten well and sometimes the body just does thing like this to us! Good luck to everyone on a new week! Much love Gems 😀
