Leek and Mushroom Risotto, Serves 4, 33pp per recipe, 8pp per serving.
250g Arborio risotto rice25og Sliced chesnut mushrooms1 Leek sliced 150ml weightwatchers fruity wine 1 knorr vegetable stock pot750ml water60g extra light soft cheese 25g parmesan cheese1 garlic clove chopped 1tsp olive oil warmed up and 3 butter bud sachets melted in itBlack pepper to tasteMethod:Add the olive oil and butter bud mixture to the pan on medium and then gently fry off the garlic and leeks till they soften up maybe 2-3 mins, then add the mushrooms and some black pepper, 3 tbsp water and cover for 5 mins. Mix the knorr vegetable stock pot with the 750ml water but don’t add yet, add the wine to the mushrooms then the risotto rice and stir constantly for 1 minute, then add the stock in, give it a good mix up and leave to simmer for 20-30 mins stirring every now and then until the rice is cooked to your taste I like mine a little al dente.. Once it has thickened up add the soft cheese and parmesan and mix it up so it’s looking creamy and serve topped with a handful of fresh parsley.Maybe add a garlic ciabatta for extra pp.. I will recommend the Nume range mini garlic ciabatta’s for 7pp each they are yummy and don’t taste like low fat ones at all!
I have come to the realisation to day that having no weekly pro points left to use, means I have more control over my food.. As on the weekend I pretty much usually just use them all. However this week I didn’t and it has made me feel like my hunger is out of my own control more than once this week, which I don’t like one bit! Last night after my walk I was ravenous and ended up having two wraps instead of one plus 3.. Yes that says 3 packets of crisps and 2 Maria biscuits!! End result.. All of my weeklies gone bar 2, I was feeling depressed and guilty that I had let my self control slip but today when I woke up I felt more in control knowing I only had my dailies to use and therefore have felt happier and more in control today.. Funny what little tricks your mind can play isn’t it?! Today has been a fantastic day in the sunshine.. 😀 While Chris was in the gym I went into town to pick up a couple of bits for Letitia’s first day back at school tomorrow and something for dinner tonight, I also picked up a really great card for Chris’ Birthday in a couple of weeks, He’s going to love it! After meeting Chris from the gym we grabbed a subway for lunch and sat down in the sunshine to eat it, I am definitely a sunshine girl.. Could easily emigrate to somewhere like Arizona in a heartbeat!!! After our lunch we went to Costa and had a coffee (Well Chris did, I had green tea with cranberry) out in the sun again, watched the world go by and saw this little beauty
They guy apparently hires it out for people to use as their wedding transport, how fabulous is that! 😀 After that we went to the beach for a bit.. Has been one of the best, relaxing days in the sun for a while. My menu today was:Breakfast: 2 Weetabix baked with golden syrup 4pp, 120ml Skimmed milk 1pp.Lunch: Low fat Turkey and Ham subway with green peppers and onions with sweet onion sauce 8pp.Dinner: Nume Cajun spiced chicken fettucine 11pp. Snacks: 2 Maria biscuits 1pp (These are a bit like rich tea biscuits, they are a substitute for Graham crackers that you see used in American recipes for cheesecake etc.. I plan on making a strawberry cheesecake on Saturday so will show you a pic of them then.) I bought them in the 99p shop you get 3 packs for that 99p so very worth it I think! Total used 25/26pp 🙂 Tomorrow I am taking Cia for another long walk so plan on having a good breakfast and taking some filling and healthy foods to munch on to keep me full up so I am not starving when I get back this time! Hi guys I’m so sorry I have let this side of things slide for so long now and it’s not on.. So I’m Back with a vengeance! I have been busy recently, have had a new kitchen put in and I’ve signed up to the Aspire swim the channel challenge.. I have also been doing the c25k! I got to week 7 then life got in the way so gonna start again from week 3 I think just to give me a bit of a refresher! Have no fear I will be here from now on posting my daily menu, recipes and just general stuff that goes on in my day to day life!
My menu today has not been so great..
B: A bowl of mushroom in black pepper, garlic powder, extra light philadelphia and some reduced fat grated cheese 2pp
L: Consisted of a cup of tea and small slice of pumpkin and ginger cake from my Graze box 2pp
D: As my cooker is yet to be reconnected I am surviving on ready meals and salad’s pretty much so dinner tonight is a Morisson nume ready meal Cajun spiced chicken fettucine 11pp
So even though I have been surviving on ready meals etc.. I did manage to lose 2.8lbs this week! Am so determined to get under that 12st bracket next week!!
