Finally feeling human again.

Hey everyone, I was planning on writing my blog yesterday but I had a migraine for 2 days straight so putting the laptop on did not happen as I think my head would have exploded! Some of you already know I seem to have lost my way recently.. I don’t really know what’s been up or why I have been off track, I have been thinking maybe it’s something to do with the uncertainty around my job as I still haven’t started properly have just been doing training and that’s been a lot to take on in itself let me tell you. So I have really been wanting to get back on track but am actually if I’m honest struggling to find the motivation.. I don’t know exactly what’s up I just don’t seem to be in it 100% however I am trying to have as many days on track as I can and I’m off to the gym tomorrow morning to swim for a couple of hours so am hoping that will perk me up a bit, I’m hoping when I finally get my start date for work that I can get back into some sort of routine again and it will all fall into place but who know’s lol. We got a kitten last week and she is adorable but a lot of work lol hence the fact I had a migraine for 2 days as she wasn’t being very accommodating in letting me sleep! Her name is Pepper and she is the most playful, scatty yet intelligent and loving cat I have ever known.

Meet Pepper

I’ve put my daily propoints back up to 29 to give me a little more room to manovuer and I’ve also been thinking to way back when the pp system first came into play and I remember losing more then than now when I am on 26. I switched my lunch and dinner round today as I was hungrier I felt at lunch time,  So given that bit of info my menu today was:

Breakfast: Golden syrup oss 5pp, 100ml Skimmed milk 1pp, Graze beach bum punnet 3pp.  

Lunch: Chilli Taco Beef in 2 tortilla wraps 14pp, 30g Light philadelphia 1pp, 15g sweet chilli sauce 1pp.

Dinner: 1 pouch Birdseye tomato and herb rice fusions 6pp, 15g Light philadelphia 1pp.

Total used 31/29pp, 2 weeklies used. 

I only have 1 weekly left now after the weekend so that’s good and I’ve also decided to try and not snack at all as I really believe that 80% of the time this is my downfall, just having things like penguins and crisps in the flat are a no no for me right now. So that’s me I will endeavour to be on everyday but I can’t promise anything! I will be on tomorrow for definite to tell you how I got on with my swim.. I am planning to swim 2 miles tomorrow so wish me luck! 🙂

Sorry for the late one tonight!

Hey everyone sorry for the late post tonight, I just got back from my second mile swim for my swim the channel challenge and realised I hadn’t written my blog today!! I did go to Morrison’s today and found out the other new Weight watchers select ready meals they have brought out, so in addition to my post yesterday about the butternut squash and mozzarella risotto 12pp, there is a hot smoked salmon and creme fraiche linguine 9pp.. I would love to review this for you but as much as I adore all types of fish, I am unfortunately not a huge fan of salmon, I don’t know why because I love just about every other fish you can think of! So if one of you lovely people reading my blog would like to try it, please let me know by all means what it’s like and I may be swayed to try it! The only other one they had was this one..

Smokey Chipotle chilli and spicy rice 12pp.

Now to be honest as much as I loved the smokey flavour and the rice was nice, It has two, yes TWO chilli symbols on it so I was expecting a bit of a kick.. Nowt, Nada, Zilch! I was to say the least a little disappointed, I do love food that has a bit of a kick to it 😉 However if you are nothing like me then you will love this the way it is, me on the other hand I will be adding a little bit of chilli powder to it next time! So my menu today was: 

Breakfast: None – I know I need to break this habit as I know when I have breakfast I am fuller and feel more in control, But we got up late again and had no milk so by the time I had gone to the shops it was lunch time! 🙂 

Lunch: Weight watchers tortilla wrap 3pp, 3 slices garlic sausage 1pp, Nume chicken tikka sandwich filler 2pp, 1 Sliced mushroom 0pp. 1 Tomato quartered and 60g cucumber chopped on the side with 15g light salad cream 1pp. 

Dinner: Smokey chipotle chilli and spicy(not so much) rice 11pp, 20g co-op reduced fat cheese 1pp. 

Snacks: 2 packs of Texan flavour whisps 5pp, 2 maria biscuits 1pp. 

Total 25/26pp. 

I am a little bit peckish after my swim but I don’t like using my ap so I am trying to push the thoughts of food to the back of my head as it’s far too late and I only have 1pp left!! Nice day doing nothing.. Lovely dinner!!

Today I have done nothing except pop to the shop and back and it has been lovely just chilling indoors watching some tv and browsing the web for recipes, I always find myself doing this when I have time on my hands.. I have about 200 bookmarked blogs and recipe websites on my laptop! In fact whilst browsing this is where I found my dinner for tonight, as I still do not have my cooker connected I thought I would search for some microwave recipes which were suitable for weightwatchers and found one that is perfect for me as it uses tortilla wraps… which as everyone who reads my blog will have worked out by now that I am slightly addicted to 😉  Recipe is here at  http://www.weightwatchers.com/util/art/index_art.aspx?tabnum=1&art_id=78521&sc=3022

It’s called a Quesadilla.. Ooohhh exotic I hear you say! I changed the recipe slightly to my tastes and to make it a bit more filling here’s the recipe I made:

Ingredients:
2 weightwatchers tortilla wraps 5pp
25g low low red pepper and chilli cheese spread 1pp
1 mini pepper sliced 0pp
1 medium mushroom sliced 0pp
45g hot tomato salsa 0pp
50g Bernard matthews tikka turkey 1pp
25g Co-op reduced fat grated cheddar 2pp
 
Method:
Spread 1 wrap with the low low cheese spread, then the other with the salsa. Add the sliced vegetables and turkey too the one with the salsa on and then add the grated cheese last, season to taste then place the other tortilla on top of it and microwave for 1 minute on high. Voila a lovely filling Quesadilla in minimal amount of time and only 9pp! 
 
So my menu today was: 
 
Breakfast: A banana and frozen mixed berry smoothie made with 200ml skimmed milk 2pp, Topped with a sprinkling of hot chocolate 0pp.
 
Lunch: weightwatchers tortilla wrap 3pp, 50g Quorn ham style slices 2pp, 1 dairy lea light cheese triangle 1pp,  Mini pepper sliced 0pp, 15g Light salad cream 1pp. 
 
Dinner: Home made Quesadilla 9pp (Recipe above)
With the cheese spread on 1, Salsa on the other.With everything on, ready to top with other tortilla.
 
Snacks: Tesco caramella sundae 4pp
 Tesco caramella sundae nice for a low pp treat 4pp
So total used 22/26pp 
 
Weigh in tomorrow am expecting a gain or a stay the same at least.. I have done nothing different this week apart from use my weeklies later in the week and do more exercise , which you would think was a good thing :/ Anyhow the scales have not been looking kind the last few days but this is something of a routine for me I seem to have a couple of good losses, then either a sts/gain so I am not too worried I know I have eaten well and sometimes the body just does thing like this to us! Yummiest dinner ever.. Plus the recipes!!

Yesterday I decided I didn’t want another ready meal I wanted something home made, but without a cooker connected this made it difficult until I saw my beloved slow cooker sitting on the side looking all empty and blue. I took some Pork and Venison sausages out of the freezer that I have had in there for a few weeks and let them defrost over night.. These sausages were lovely and I got them in Co-op, they are 12pp for the whole pack and you get 6 in it. I also have bought some butter buds recently as alot of people have been raving about them and I wanted to see if they were any good.. I can honestly say I don’t think I will buy normal margarine/butter again they are amazing, you can use them on Jackets, in mash, on toast, to make sauces, in baking.. The list is endless and they are 0pp for up to 2 sachets and 1pp for 3 up to 7 sachets!! Go buy them seriously Lakeland..Go now!! 

My menu today was a little more snacky, but as I said before I use most/all of my weeklies on the weekend never usually after Monday eve as I know I either put on or Stay the same if I do!

Breakfast: Banana 0pp.. we didn’t have much milk and both Tish and Chris wanted cereal also so I just had that.

Lunch: Weight watchers Tortilla wrap 3pp, wafer thin turkey 40g 1pp, Nume chicken tikka sandwich filler 70g 2pp, 30g sliced mushrooms 0pp, Nume sweet chilli multi grain crisps 3pp (I don’t think they are as nice as the cream cheese and black pepper ones, But each to their own)

Dinner: Pork and Venison sausage casserole 6pp.. (Recipe below), 105g New potatoes 2pp, Lemon, pepper and parsley sauce 0pp.. (Recipe below), Creamy mushrooms 1pp. 

Snacks: Bottle of Stella pear cider 8pp, 3 Things from my graze box.. Ancient forest nuts 6pp, Bounty hunter 4pp, Fruit and seed flapjack 6pp. 

Total used: 42/26, 16 weeklies used.. 25 left! 

Recipe for Pork & Venison sausage casserole: 19pp per recipe, 6pp per serving, serves 3.

Ingredients:
340g pack of Pork & Venison sausages( Mine were from co-op and called Holme farmed) 
1 Red onion chopped 
half a punnet of mushrooms( I didn’t weigh I just sliced sorry lol)
200g Nume Baked beans
1 clove of garlic diced 
400g tin of chopped tomatoes
3tbsp Balsamic vinegar
100ml water
Salt & Pepper to season
 
Method:
I literally put my slow cooker on warm to heat up at 9:30am, whilst I chopped everything that needed chopping, Then put it all in the slow cooker gave it a stir and put the heat to low and left it till around 4pm, then served with new potatoes with lemon, pepper and parsley sauce and carrots(Well carrots for Tish and Chris any way)
 

Mmm Cooking along nicely!

Recipe for Lemon, black pepper and Parsley sauce, 2pp per recipe, 0pp per serving, serves 4. 

Ingredients:
16g Butter buds (8 Sachets) they are 2g each.
2tsp Lemon juice(The recipe called for 1tsp but I didn’t find it very lemony so I used 2.)
1/4tsp Black pepper(I used 1/2 tsp as I love pepper but others may not so much)
Small handful fresh parsley chopped.
120ml Boiling water.
 
Method:
Whisk the butter buds, water, lemon juice, and black pepper together in a bowl, once well combined add the parsley and either serve straight away or set aside for later.

Bowl of yumminess right there ^^^ 😉

 
 
Now with the Lemon, Black pepper and parsley sauce I just poured it over the potatoes on the plate but in hindsight I wish I had put the cooked potatoes into the bowl with the sauce and given them a good shake to coat them as I feel this would have gone down better than having to dip the potatoes in the sauce on the plate lol. Right that’s me for today although I can say that the dinner was a massive hit with both myself and the o/h, Let me know what you think when ya make it. Much love Gems 😀
